Vegan Chinese-Inspired Barbecue Steamed Buns

Ingredients

Pickled Vegetables

  • 2 cups sliced vegetables(I used carrots, onion, and cucumbers)
  • 3/4 cup warm water
  • 1 tsp salt
  • 1 tbsp rice vinegar

Tofu Filling

  • 1 cup sliced firm tofu
  • 1/2 cup mushrooms

Sauce

  • 2 tbsps dark soy sauce
  • 1 tbsp soy sauce
  • 1/2 tsp chinese five spice powder
  • 1/2 tsp white pepper
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil

Topping

  • 1 tbsp crushed peanuts
  • cilantro

Steamed Buns

  • 7-10 store-bought steamed buns

Instructions

Pickled Vegetables

  • Heat together the water, sugar, vinegar, and salt until dissolved.
  • Pour the warm mixture over the sliced vegetables, then set aside. Let cool in the refrigerator until assembly time.

Tofu

  • Combine all the ingredients for the sauce.
  • Stir fry the tofu and mushrooms together until crispy and almost fully cooked. Add in the sauce and stir through.
  • Set aside to cool.

Steamed Buns

  • Steam the buns in a steaming basket or in the microwave.

Assembly

  • Layer the tofu, pickled vegetables, cilantro, and chopped peanuts in the steamed bun. Repeat for all the steamed buns. Serve and enjoy!
