Chinese Almond Cookies

Ingredients

Dough

  • 2 tbsp unsalted butter, melted
  • 2 tbsp vegetable oil
  • 2 egg yolks
  • 1/2 tsp salt
  • 1/2 cup + 2 tbsps all-purpose flour
  • 2 tbsps almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup white sugar
  • 1/2 tsp almond extract

Before Baking

  • 9 almonds
  • 1 egg yolk

Instructions

Dough

  • In a medium bowl, mix together the oil and egg yolks with the melted butter. Set aside.
  • In a large bowl, mix together the all-purpose flour, almond flour, baking soda, baking powder, and sugar.
  • Add the almond extract and wet mixture into the dry mixture. Mix until a crumbly dough forms.
  • Cover and set aside for 20 minutes.
  • Preheat the oven to 375 degrees Fahrenheit. Separate the dough into 9 balls.

Before baking

  • Top each ball with an almond, then brush with beaten egg yolk.
  • Place the balls on a parchment lined baking sheet, making sure they are at least 1 inch apart from each other. Bake for 12-17 minutes until golden brown.
  • Let the cookies cool on a rack for at least 10 minutes before enjoying.
