Chinese Almond Cookies

Ingredients
Dough
- 2 tbsp unsalted butter, melted
- 2 tbsp vegetable oil
- 2 egg yolks
- 1/2 tsp salt
- 1/2 cup + 2 tbsps all-purpose flour
- 2 tbsps almond flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/3 cup white sugar
- 1/2 tsp almond extract
Before Baking
- 9 almonds
- 1 egg yolk
Instructions
Dough
- In a medium bowl, mix together the oil and egg yolks with the melted butter. Set aside.
- In a large bowl, mix together the all-purpose flour, almond flour, baking soda, baking powder, and sugar.
- Add the almond extract and wet mixture into the dry mixture. Mix until a crumbly dough forms.
- Cover and set aside for 20 minutes.
- Preheat the oven to 375 degrees Fahrenheit. Separate the dough into 9 balls.
Before baking
- Top each ball with an almond, then brush with beaten egg yolk.
- Place the balls on a parchment lined baking sheet, making sure they are at least 1 inch apart from each other. Bake for 12-17 minutes until golden brown.
- Let the cookies cool on a rack for at least 10 minutes before enjoying.
