Mini Pecan Pie Recipe

Ingredients
- pie dough
- 1/2 cup roasted pecans
- 3 tbsp melted unsalted butter
- 1 egg
- 1/4 c light brown sugar
- 2 tbsp maple syrup
- raw pecans for topping
Instructions
- Preheat oven to 375 degrees F.
- Using a cookie cutter or cup, cut out 4 circles to fit into your tart molds. My tart molds are 2 inches in diameter, you can cut out more or less circles depending on the size of your molds.
- Fit the pie dough into the tart molds, then refrigerate until the filling is ready.
- Roughly chop the roasted pecans into small pieces.
- Whisk together the butter, sugar, egg, and maple syrup. Fold in the chopped pecans.
- Fill the tarts 3/4 full with the filling, top with the raw pecans, then bake for 20-25 minutes or until fully done.
- Let cool then enjoy!
