Pumpkin Bread with Crumble and Caramel

Ingredients

Batter

  • 1/4 c unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 c vegetable oil
  • 1/2 c milk
  • 1 c pumpkin purée
  • 1 tsp pumpkin pie spice
  • 3/4 c light brown sugar
  • 2 eggs or flax eggs
  • 1 c whole wheat flour
  • 1/2 c all-purpose flour
  • 1 tsp baking soda

Crumble

  • 1/2 c all-purpose flour
  • 1/2 tsp cinnamon
  • 1/3 c white sugar
  • 1/4 c unsalted butter, melted
  • optional: caramel sauce
  • powdered sugar

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.

Crumble

  • Combine all the ingredients of the crumble. Set aside until later.

Batter

  • Combine all the wet ingredients of the batter until smooth.
  • Fold the dry ingredients of the batter into the wet mixture and whisk until smooth.
  • Line a loaf pan with parchment paper. Pour the batter into the pan, then sprinkle on chunks of the crumble, making sure to evenly disperse it across the top.
  • Bake for 50-60 minutes, until lightly golden.
  • Let cool for at least 30 mins before topping with caramel sauce and powdered sugar. Slice and enjoy!
