Pumpkin Bread with Crumble and Caramel

Ingredients
Batter
- 1/4 c unsalted butter, melted
- 1 tsp vanilla extract
- 1/4 c vegetable oil
- 1/2 c milk
- 1 c pumpkin purée
- 1 tsp pumpkin pie spice
- 3/4 c light brown sugar
- 2 eggs or flax eggs
- 1 c whole wheat flour
- 1/2 c all-purpose flour
- 1 tsp baking soda
Crumble
- 1/2 c all-purpose flour
- 1/2 tsp cinnamon
- 1/3 c white sugar
- 1/4 c unsalted butter, melted
- optional: caramel sauce
- powdered sugar
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
Crumble
- Combine all the ingredients of the crumble. Set aside until later.
Batter
- Combine all the wet ingredients of the batter until smooth.
- Fold the dry ingredients of the batter into the wet mixture and whisk until smooth.
- Line a loaf pan with parchment paper. Pour the batter into the pan, then sprinkle on chunks of the crumble, making sure to evenly disperse it across the top.
- Bake for 50-60 minutes, until lightly golden.
- Let cool for at least 30 mins before topping with caramel sauce and powdered sugar. Slice and enjoy!
